Oh, it's a Monday. It's one of those days when everything comes rushing at you, but you're not quite ready for it because you're still in weekend mode. Speaking of the weekend, it was a decent one. We finished up Kick Camp, and now our girls have a much needed week off. Bryan and I had our sushi date, and then I got a migraine that kept me in bed all yesterday.
I did crawl out of bed long enough to make Peach Crisp, the weekend baking project I mentioned.

Peach Crisp:
8 fresh peaches
1 cup flour
1 cup sugar
1 stick of butter
1/2 tsp cinnamon
1/4 tsp salt
Preheat the oven to 375. Slice fresh peaches and place in the bottom of a baking dish. Combine butter with other dry ingredients until mixture is crumbly. Top peaches with the crumbly mixture and bake for about 45 minutes. Then try to wait long enough for it to cool before you eat it...
Now, Bryan tells me he doesn't like fresh peaches, something about the texture. So, I made him this, my favorite dessert, and he happily ate 3/4 of it as soon as it came out of the oven. Then, he asked me if I could make it with apples? What about strawberries? I told him I supposed you could make it with just about any fruit or berry.
Even though we don't have practice this week, it's still a busy one for me. I have an all-day workshop in OKC tomorrow with my bosses. There are also some drill team concerns about nationals we have to handle. We have camp next week to prepare for.
I think I need another cup of coffee.

My mom has a recipe very similar to that only it comes out more like a cobbler. I think she adds milk. ANyway, she makes it with all sorts of fruits!
Nothing to be sorry about. I had an extraordinarily horrible weekend and I just wasn't ready for this. Maybe if it had been Friday I would have reacted better :)
