It's Thursday evening, and we're off to spend the holiday weekend with the Baucoms at Turner Falls. Bryan's birthday is on Saturday. Since he never reads my blog, I can write this without fear... I had to order his birthday cake from a bakery here in OKC. I know all the good bakeries in Tulsa, but not here, so I just kind of drove around until I found a decent one. I ordered a strawberry cake with fresh strawberry and cream cheese frosting (his favorite). Guess what color it is? Pink. I bought my husband a pink cake. I can just hear his brothers already...
Anyway. I'm also making fajitas for his birthday dinner, along with Richard's salsa and Jen's bean dip. Now, this bean dip is amazing. I like to call it The Cure for Anorexia because I took it to a party in college, and a terribly emaciated dance friend who never ate anything but jolly ranchers and lettuce took the dish from the table and licked it clean. Seriously. Here's the recipe:
2 16 oz cans refried beans
2 8 oz bars lowfat cream cheese
8 oz lowfat sour cream
2 packets of taco seasoning (I like the Old El Paso brand)
8 oz sharp cheddar cheese, shredded
Pre heat the oven to 350. In a mixer, combine beans, cream cheese, sour cream and taco seasoning until completely mixed. Layer half the bean mixture in a big casserole dish and top with half the shredded cheese. Repeat with remaining beans and cheese. Bake for about 30 minutes, or until the cheese is melted and bubbly. Cool before serving alongside plenty of tortilla chips.
